Over the past 20 years, we have cultivated a close association with Serge Dansereau of Bathers Pavilion, Sydney fame. During this time, Serge has trained many chefs, and we are pleased to have Alex Bentley leading the culinary experience on Paspaley Pearl through to high cuisine standards.
With this, our guiding principles are fresh ingredients and regional quality over quantity. You will see and spend time with Alex and his team throughout your voyage, experiencing modern Australian cuisine through his culinary approach.

Our culinary experience approach is leisurely and relaxed in the Horizon Grill and Lounge where we offer daily breakfast and lunch featuring fresh ingredients. As well, vistas of the sea and remarkable landscapes greet you each morning to go alongside the Paspaley Pearl dining experiences. This creates a perfect kick-start to each day of adventure tourism exploration.
Culinary Excellence
Each evening begins with our signature ritual in the Horizon Lounge and Bar, where the expedition team recaps, accompanied by drinks and canapés. Here, we create leisurely reviews of the day’s adventures partnered with culinary experiences. The light-hearted conversation amongst fellow adventurers enlivens these gatherings while our team reveals tomorrow’s possibilities.
In the evenings, à la carte dinner unfolds in our intimate Ocean Restaurant, where Alex and his culinary team craft daily menus to showcase fresh ingredients and regional delicacies. Here, modern Australian cuisine with Southeast Asian influences celebrates the cultures we explore throughout expeditions. We use carefully sourced, high-quality ingredients to transform each evening into a culinary adventure that defines adventure tourism experiences.
